95% Carricante and 5% other local varieties from Mount Etna's northern slopes. The vineyards are located in Contrada Moganazzi, Solicchiata, within Castiglione di Sicilia at 670 meters elevation with north/north-east exposure. Tenute Tozzi harvests the grapes manually between late September and early October from vines trained in traditional alberello and cordon speronato systems. The volcanic soils contain deep black earth enriched with sand and minerals. Fermentation takes place in stainless steel at controlled temperatures, followed by six months aging on lees before bottling.
