Prior to achieving AOC status for the Côtes d’Auvergne, this area was considered an extension of the Loire Valley. However, this is far more unique terroir, with heavily volcanic soils imparting distinct charachter and minerality in the wines. With a minimalist approach in the cellar, this 100% Chardonnay shows its spunk and charm. Sustainably farmed vineyards, stainless steel fermentation with indigenous yeasts; no malolactic fermentation yet rests on lees for 3-6 months. Made by Saint-Verny cooperative.
